Abstract:Technical conditions of extracting vitamin E and flavonoids rich oil from wheat germ were investigated.Six different extracting solvents of n-hexane,mixed solvent of n-hexane and acetone, mixed solvent of methanol and acetone, mixed solvent of isopropanol and 1,2-dichloroethane were selected to investigate the extracting effect, and the mixed solvent of n-hexane and acetone was the ideal solvent. The process parameters were optimized for preparing wheat germ oil with maximum retention of the functional substances(Ve,flavonoids). The optimal extraction conditions were established through single factor experiments and orthogonal experiments as follows:extracting temperature 45¡æ,dropping rate of solvent 5.5mL/min for 100g wheat germ, extracting time 45 min.Under these conditions, the residual oil in wheat germ meal was 0.354%,and the content of Ve and flavonoids in the oil were 3.7949 g/kg and  10.29 g/kg,respectively.
