Oxidation of vegetable oil during the normal storage

   Four soybean oils,three rapeseed oils,two peanut oils,three cottonseed oils with different grades were stored at room temperature,and the changes of the oxidation indexes of oil,such as peroxide value(PV),anisidinevalue(AnV) and iodine value(IV) were determined.The shelf life induced by Rancimat method and the actual storage period were compared.The results showed that the variation trends of PV were similar to AnV,and IV kept almost no change during the storage.The PV was more sensitive to reflect the oxidation degree of oil than AnV and IV.The shelf life induced by Rancimat method was not consistent with the actual storage period.
