Preparation of alcohol leached peanut protein concentrate

    The alcohol leached precess was employed to prepare peanut protein concentrate from low temperature peanut meal.The influence factors such as ethanol concentration,extraction times,extraction temperature,ratio of solid to liquid were also studied.The optimum conditions were obtained by orthogonal test as follows:ethanol concentration 60%,extraction times 5(once 30 min),extraction temperature 50¡æ,ratio of solid to liquid 1:8.Under these conditions,the content of protein in the peanut protein concentrate was 68.15%(N¡Á6.25,dry basis),and the NSI was 32.72%.
