Abstract:The physical modification conditions of alcohol leached peanut protein concentrate ,such as solution temperatue,solution pH,ultrasound time,were studied.Through orthogonal test,the optimum conditions were obtained
 as follows;100℃ water used to dissolve the protein concentrate,ration of solid to liquid 1:9,solution pH9,ultrasonic wave power 300W,frequency 25kHz,ultrasound time 30 min.In these conditions,the content of protein in the modified was 65.86%(N×6.25,dry basis),and NSI was 64.68%.
